Chicken served on a bed of spring greens with sun dried tomatoes and crispy bacon
Ingredients
Free range chicken breasts
Streaky bacon
Sundried tomatoes
Spring greens or spinach
Small onion
Basil
Lemon juice
Olive oil.
Garlic

Directions
1. Roast the chicken breasts with chopped garlic and a splash of lemon juice and olive oil. Salt and pepper to suit
2. When the chicken is half cooked, fry off the onion and streaky bacon and chop the spring greens ready to steam.
3. Put the spring greens/spinach into a seperate pan with about an inch of water and one clove of finely chopped garlic and let steam for a few minutes
4. Add the sundried tomatoes and basil to the onion and bacon pan and fry the whole lot briefly (until tomatoes are warmed through)
5. Finally, serve the spring greens/spinach with the chicken sitting on top and then cover with the bacon, tomato, basil and onion mix
6. Serve immediately and drizzel olive oil to suit!
