Hugh at the Bath Canteen...

The Holburne Museum and River Cottage Canteen Bath Conjure up a Feast on Monday 5th July  with Hugh and Xa Sturgis (The Great Xa).

Hugh and The Great Xa promise to amuse and astonish as they Conjure up a Feast in support of the Holburne Museum's development project.

The Bath Canteen will host an evening of extraordinary culinary and magical delight. The unparalleled skills of the Holburne Museum's Director,  Alexander Sturgis as the magician The Great Xa, will be complimented with Hugh's delicious cookery skills.

The evening's entertainment includes a glass of fizz, the conjuring  of a feast, a three course dinner and an auction - all for £65 per head.

Bath Life Review - Restaurant Taster 

River Cottage Canteen  

HFW's restaurant at Komedia has now opened for business in the evening. CALUM ROGERS likes everything about it

The late, sadly missed George Melly used to belong to an organisation called Piped own. He'd leave a card behind on the restaurant table if muzak had intruded on his eardrums during a meal. The message would be something along the lines of: "I would have spent more money and time in your establishment, but your music drove me out."

As far as I know, you can join this campaigning club who believe that unwanted music in public places is emotional pollution. [Yes,you can indeed join. £15 per annum for quarterly newsletter listing muzak-free premises, five types of protest cards and four types of sticker - Ed].

However, I will say that the choice of music last week in the River Cottage Canteen - Hugh Fearnley Whittingstall's place in Bath, based in Komedia - did win me over somewhat. An eclectic and indeed eccentric choice of music kept myself and my companion in good spirits - everything from Jim Morrison to Phil Spector's Christmas Album had us singing along (and this only May!). As far as I was concerned it added to a jolly atmosphere, which a friendly and obliging staff enhanced.

Canteen's decor is on the spartan side, but then the clue's in the name. The glamour stakes are taken up a notch at evening time, however, with crisp white linen covering the plain wooden tables, and candles dispersing a soft glow,both of which soften the refectory-chic look considerably.

We also loved the huge pictures of cattle and sheep on the wall gazing down on us, even if they did look a tad reproachful when we started to tuck into their relatives.

But first, the nibbles. Our friendly waiter guy, the splendidly monickered Nick Scraggs, brought us home-made hummus, River Cottage sausage and spicy yoghurt, along with a bread stick thingy (we believe that's the technical term); an especially tasty take on real down-to-earth ingredients.

The animals on the wall could have had no quibble with my starter of wild nettle soup and wild garlic yoghurt. My companion idly wondered if it would be served with dock leaves in case I stung my tongue. I explained that in all likelihood the Urtica urens, as the stinging nettle is pleased to call itself when out on the pull, would be pureed and presumably de-stingified in the cooking. Probably some secret process known only to Jane Whittingstall. Hugh is probably completely in the darkabout it.

Whatever, this was a delightfully refreshing soup, delicate and zingy. There was a tiny hint of the plant's bitterness in the main colloid, but it sat very well with the yoghurt, the perfect counter-balance. Fresh-bread-baked-on-the-premises turned the dish into a treat.

My companion had the devilled crab with flat-leaf parsley on toasted oatmeal - a great combo of taste and texture, something she normally only says when running her hand through my hair. The crab, we were told, had been transported from the south coast that morning 'at great expense', which made us wonder about its mode of transport: personal chauffeured limo? Heli-drop? Still, nice to know it hadn't just come from Waitrose.

Every so often as we ate, a great cheer would go up in the background. I assumed this was coming from the kitchen, where the staff would have been applauding their chef for performing a particularly satisfying flambeed banana. Or perhaps an outrageously nimble omelette flip-over. I'd momentarily forgotten we were next door to the Komedia comedy club. I'm not sure if George Melly would have approved.

But now our main courses were en route. My lemon sole - on potato and lemon with herb butter - was meltingly tender. Nick assured me of its freshness and localness, and certainly the poor beast still looked faintly affronted to be there. Sole can sometimes be flabby and insipid - not a bit of that at Canteen. The potato (plenty of it, too) was also firm and tasty. I should probably add that the ever-attentive Nick had recommended an invigorating Touraine Sauvignon Blanc (Chateau Gaillard), which was excellent value at £18.45.

It seemed to go equally well with my companion's lamb shoulder, served with purple sprouting broccoli and wild garlic mash. She pronounced the dish 'tender, delicious and exciting'; she was looking at Nick at the time, having forgotten my hair, but I think on balance she meant the lamb.

Should you have any room for dessert, you could choose from sticky toffee and pumpkin seed fool; dark chocolate mousse served with white chocolate vanilla sauce and toasted oats; or rhubarb and orange mille feuille. We went for the cheeseboard (£10) - Montgomery cheddar, Kelston Park creamy and mild cheese, and Blue Vinney from Dorset. These were served with home-baked spelt crackers and Denham cheddar cheese straws, washed down with a very robust bottle of Rioja (Ijalba Livor).

We finally said our farewells to Nick and headed into the night, me and the Ed, promising ourselves we would go back to the Canteen really soon - for the food, the welcome, the ambience - and that strangely enjoyable music track.

Nick Fisher author of ‘Fish' and new River Cottage Handbook #6 ‘Sea Fishing', and regular River Cottage contributor will be taking a break from his very busy schedule to host an event at River Cottage Canteen - Bath on Sunday 23rd May.

Nick has been a partner of River Cottage for over 10 years, has appeared alongside Hugh Fearnley-Whittingstall on a number of his TV series'. In addition to this Nick Fisher writes for TV, film, radio and print. He is a BAFTA-winning scriptwriter. Nick has also been a journalist for over 25 years, and his work has appeared in all major newspapers. He was the Agony Uncle for Just Seventeen magazine, The Sun's film critic for five years, and remains fishing correspondent for Shooting Times. He wrote and presented Channel 4's angling series Screaming Reels, and BBC Five Live's early morning fishing show Dirty Tackle.

There will an intimate talk about ‘Sea Fishing' and a question and answers session, followed by a 3-course dinner; the menu devised by Nick and showcasing some of the fantastic recipes in the new handbook. The evening will appeal to anglers, fish enthusiasts and of course those who love great food. The Event will start at 7pm and aim to finish by 10.30pm.
