A really filling vegetable main course of as a side dish for meat. Hearty, warming and you can use almost any veg or left overs.
Ingredients
Carrots, cauliflower, diced potatoes, green beans, peas etc
1 leek, finely sliced
1 onion, finely chopped
25g butter
1 pint milk
1 huge heaped dessert spoon plain flour
1 teaspoon mustard
good handfull of grated cheddar

Directions
Cook (steam or boil) all your veg, or if using leftovers, place directly in oven proof dish. Gently saute the leeks and onions and add to the other veg and sprinkle with a little salt and pepper.
Put the butter in a saucepan and melt, add the plain flour and mix to make the roux. Start adding the milk slowley, taking the saucepan of the heat occassionaly. Do not allow to boil. Continue to add the milk in stages, allowing the sauce to thicken eachtime. When it coats the back of the spoon, take it off the heat and mix in the mustard and most of the cheese. You can add some parsley at this point if you wish.
Pour the sauce over the veg in the dish. Top with the rest of the grated cheese. You could also top with some bread crumbs too.
Cover, and put in the oven on 160 deg for 45 mins then uncover and brown off the top.
You can keep it prepared but not baked in the fridge for the next day if needed.
