I saw this ready made in a well known supermarket and thought "I can make that myself". Its a sweet, smokey flavour to chicken breasts, everyone here loves it.
Ingredients
4 large / plump chicken breasts, skinned and boned.
4 slices of smoked ham (Brunswick works well)
4 big dessert spoons of tomato sauce
1 teaspoon dried mixed herbs
1 ball mozzarella cheese cut into 4 slices
1 small tin of pineapple rings
fresh black pepper

Directions
Place the 4 slices of ham on the chopping board and lay the chicken breasts on each. Mix the tomato sauce with the herbs and spread over the chicken. Add a slice of mozzarella on top and then wrap the ham over the chicken. Top this with a pineapple ring and a grate of fresh black pepper. Place in an oiled dish and cover with foil.
Put in the oven on 180 deg for 30 mins then uncover to brown off. Everyones oven is different so use your knowledge on your oven timings.
I serve this with garlic bread and fries.
My son says its like eating a pizza without the dough and finding the chicken surprise inside.
