Pear, Rocket and Stilton Salad

A great salad for any time of the year. You can substitue the Rocket for other seasonal leaves.
Ingredients
A large bowl full of Rocket or a mixture of salad leaves and herbs
150g mature stilton cheese
1/4 of a cucumber chopped into cubes
2 large pears, peeled and sliced
Dressing: if required, this goes quite well
50ml olive oil
50ml white wine vinegar
1 heaped teaspoon whole grain mustard
1 heaped teaspoon honey

Directions
Wash the rocket or salad leaves and arrange on a plate, add the cucumber and sliced pears, sprinkle with the crumbled stilton.
Put all the dressing ingredients in a clean jam jar and pop on the lid, shake well.
Serve the salad straight away so the pears don't go brown with the dressing on
the side. This is nice on its own with some crusty bread or with quiche or ham.

For anyone who has a problem with cow's milk, it works well with Roquefort too.
