Bolognase, bacon and herb bake

A really easy meal using left-overs. I made this today for dinner tonight and due to lack of cash till next week, I used up bits and pieces from the freezer and fridge. Its handy to have a small portion of bolognase meat sauce knocking around in the freezer.

Ingredients
150 grms / 1 portion of bolognase meat sauce
3 rashers smoked bacon, chopped up
1 garlic clove
a few mushrooms, sliced
a few tomatoes, sliced (doesn't matter if they're a bit soft
a glug of olive oil
2/3rds of a bag os pasta or mixture of various pasta shapes from store cupboard
onion, red pepper, fresh herbs, leftover cooked carrots , all chopped(whatever you can get your hands on)
handful of rocket or spinach
2 large potatoes, very very thinly sliced (I use a mandolin thing)
4 tablespoons of tomato sauce
Directions
Cook the pasta according to instructions, drain and set aside. Meanwhile defrost bolognase, while this is happening, fry the onions in the olive oil with the bacon and crushed garlic clove, fry until onions are soft and bacon cooked. Add the chopped tomatoes, peppers and other bits and pieces that you want to add at this stage. Cook for a few mins. Add the defrosted bolognase sauce and tomato sauce, stir well and cook for about 10 mins. Add this meat and veg mixture to the pasta. Chuck in the fresh herbs, or dried if you don't have fresh. I used Basil and Thyme. Mix in the rocket or spinach leaves. Put into a pyrex / oven proof dish.
Slice the potatoes on a mandolin (being careful not to remove finger tips) and par boil them until just soft, only a few mins. Drain and pat the slices dry. Arrange these on the top of the pasta bake. This stops the pasta drying out in the oven and also makes the meal a bit more filling (I have a teenage son and a scaffolder to feed.) Cover with foil and leave until ready to bake.
Put in the over at 180 deg, covered for 40 mins, then uncover and brown off the topping of potato for a few mins. Serve with some crusty garlic bread.
This cost under £4 to make.
