Having raised and sluaghtered my first Dexter (i have 3 more two of which are in calf) . I now have a freezer full of beef, I had the butcher leave the ribs as a joint.
Has anyone got any reciepes for Rack of Beef Ribs, as i would like to have them for my Christmas Dinner.

They will be lovely however you cook them
but we like ours roasted with a covering of seasoned flour and mustard over the fat so the joint cooks with a really tasty crust on it. lovely

I've got the same only mines Highland
I just roast the same as Issy, with flour and mustard.
I must say I always um an' ah over the length of cooking time when its such a large joint with bone and tend to go by gut feeling on the day. If its well rested after taken from the oven it doesn't matter if its on the pink side.
Also I keep records when its something I dont cook everyday and thats a help.
It will be lovely i'm sure, its hard to ruin really good beef :wink:
